Chef Nick Edgar to head up Hambledon Wine Estate restaurant

The restaurant will offer wine tastings and use produce from a kitchen garden.

Chef Nick Edgar is to head up the kitchen at a new restaurant and bar launching at the Hambledon Wine Estate in Hampshire in February 2025.


Edgar, who held a Michelin star at the Samling in the Lake District and was a 2014 National Chef of the Year finalist, will oversee a 40-cover restaurant and tasting room.


It marks a new chapter for the Hambledon estate, which is now owned by spirits supplier Berry Bros & Rudd and Portuguese winery Symington Family Estates.

 

Set in the village of Hambledon in the South Downs National Park, the 200-acre vineyard has been growing vines since 1952.


It was founded by Major General Sir Guy Salisbury-Jones, who planted his first vines in the village at the beginning of England’s burgeoning wine industry.


The estate will be run by managing director James Osborn, who previously oversaw Squerryes Wine Estate in Kent, alongside head of hospitality Katherine Fromm, who has worked at the Pig and Limewood hotel.


Edgar, who was also head chef under Raymond Blanc at Le Manoir Aux Quat Saisons in Oxfordshire, will lead the restaurant.


It will open from lunch until evening and champion seasonal produce as well as produce from the kitchen garden.

Guests can expect the likes of Chalk stream trout served with beetroot dill and horseradish; roasted loin of Hampshire venison, celeriac, pear and juniper; and braised beef cheek, pomme purée with roasted and pickled alliums.


Desserts will include pistachio soufflé with clementine sorbet and dark chocolate sauce.

 

The bar will offer a selection of Symington’s and Berry Bros & Rudd’s own wines including the Symington Contacto Alvarinho and the Sancerre Cotat, as well as a short cocktail list.


Edgar said: “I feel very lucky to join Hambledon Wine Estate, I instantly fell in love with the vineyard; the sparkling wines they make, their commitment to the highest standards and to their uncompromising approach, and most importantly their dreams for the restaurant.


“I am so excited to bring their vision to reality and hopefully bring a restaurant that the people of Hambledon and surrounding areas will be proud of.”


Osborn said: “This is just the beginning for Hambledon and the estate, which we will be announcing early next year!"


Walk-in or privately booked tastings will be offered in a room at the rear of the dining room overlooking the estate’s oldest vines.

 

The restaurant at Hambledon Wine Estate will open on 5 February 2025.
