Niall Keating to open Tender restaurant at Gary Neville’s Stock Exchange Hotel

Former Whatley Manor executive chef Niall Keating is to open a new high-end restaurant at Manchester’s Stock Exchange Hotel this summer.

 

The 90-cover restaurant, named Tender, will open at the Manchester hotel on 5 June, replacing the Stock Market Grill which closed after five months last summer. Prior to that, the space was home to Tom Kerridge’s Bull and Bear.

 

In his new permanent role as chef-in-residence, Keating will oversee a variety of menus including weekday brasserie lunch, a la carte dinner, afternoon teas, and Sunday roast. He will also create a special tasting menu for a chef’s table dining experience.

 

Tender is described as ‘family-style brasserie’, with dishes including the likes of rib of beef, wedge salad with blue cheese and bone marrow, tallow chips and confit garlic.

 

The restaurant will have an additional dining room called the Bank which will offer private dining for up to 12 guests.

 

Keating said: “From when I first walked through the doors of the hotel into the dining room, I knew this was the place for me and that we could create something really special. I immediately felt connected to both Gary and general manager, Tracy Harrison, and I knew what I wanted to create at the hotel and restaurant.

 

“I want a space that feels vibrant, warm and energetic, that brings to life the history of the stock exchange roots of the hotel, while providing an upscale and comfortable brasserie dining experience.

 

Gary Neville, owner of the Stock Exchange Hotel, added: “We couldn’t be happier to be partnering with Niall Keating for Tender and bringing his culinary expertise to the hotel. His vision to create versatile and accessible dining options is exactly what we’ve been looking for, to allow everyone visiting Tender to find the right experience for them.”

 

Keating gained attention from the culinary world during his time as executive chef of Whatley Manor, where its Dining Room restaurant won two Michelin stars.

 

Keating left Whatley Manor after five years at the end of 2021. He then went on to open Lunar Restaurant in Staffordshire, where he earned the restaurant a Green Star in 2021.

 

He was also crowned champion of champions on Great British Menu in 2020.
