New Covent Garden Market predicts a rise in popularity of citrus fruits such as yuzu and clementine and further interest in the eating of whole vegetables to reduce waste as some of the hot trends for 2021.
The report also suggests a trend for combining sweet and savoury flavours is on the horizon, while mangoes, pomegranates and brassicas are growing further in popularity.
The market’s annual Fruit and Vegetable Trends Report 2021 is based on qualitative trader insights from its 100-plus wholesalers, who supply London restaurants including La Gavroche, Sketch, Soho House, Jikoni, Darjeeling Kitchen, Restaurant Story, Pho and more.
Pollen + Grace, a health-focused food brand based at New Covent Garden Market, as reported consumer interest in quince, celeriac and redcurrant. Medjoul dates are also popular as a sugar or caramel replacement in vegan baked goods.
I.A. Harris & Sons cite that round pale aubergines are also becoming a very popular request as their texture lends itself to a meat-like substitute.
