Nathan Eades and Alyn Williams join Wild Rabbit

Chefs Nathan Eades and Alyn Williams have been named as the new culinary team at the Wild Rabbit.

 

Tim Allen left his role as executive chef of the Michelin-starred restaurant owned by Lady Bamford in Kingham, Oxfordshire, earlier this year.

 

Williams, chef-patron at Alyn Williams at the Westbury, will take over as chef-patron of Wild Rabbit in May 2018. While Williams will be based at Wild Rabbit day-to-day, his restaurant at the Westbury hotel in London's Mayfair will continue to run as normal under his name.

 

He said: "The Wild Rabbit's location in the Cotswolds, surrounded by the Daylesford estate, means that we have access to some of the finest locally sourced ingredients in the country. My ethos is symbiotic with our surroundings, and I am looking forward to working closely with everyone at Daylesford, from the farm to the bakery, to produce great dining experiences for our guests".

 

Eades, who takes over as head chef from January 2018, joins after two years at the Michelin-starred Edgbaston restaurant Simpsons, owned by Andreas Antona and overseen by chef-director Luke Tipping. He was also previously chef-owner of Epi at the Courtyard in Bromsgrove.

 

He said on Twitter: "Luke and Andreas have been nothing but first class. Throughout my time there, they have developed me as a person and as a cook. I'll forever be indebted to both of them for the rest of my career.

 

"It's been a difficult decision to leave one of the best restaurants in the country, but this project at the Wild Rabbit is something that makes me excited. Together, I hope we can create something incredible."

 

He later added: "I am extremely excited about moving to Kingham and to building on the foundations of the past as well as bringing in my own perspective and style. I'm looking forward to being part of a team that pursues excellence, and to continuing the tradition of fantastic food at the Wild Rabbit."

 

Owner Carole Bamford said: "I am very proud that the the Wild Rabbit has always attracted food lovers from afar whilst looking after our locals, and I know our two new chefs will be an exciting next chapter for the pub."
