The 26-cover wine bar and restaurant will serve seasonal dishes such as devilled egg with wind sausage emulsion alongside a selection of natural wines.
Further details around Sesta, the wine bar and restaurant due to take over the site of Pidgin in London’s Hackney, have been revealed.
Earlier this week, Pidgin announced it would hold its final service on 18 August after nine years of trading.
The 26-cover Sesta will be led by Drew Snaith, current head chef at Pidgin, and Hannah Kowalski, who was formerly general manager.
The pair first started working together at Jackson Boxer’s Brunswick House in London’s Vauxhall and will be joined by Pidgin sous chef Ben Ing and general manager Majalis Lundstrom Celedon.
Sesta will serve an à la carte menu showcasing seasonal ingredients, offering creative takes on British and European classics such as devilled egg, wind sausage emulsion, trout roe and chive; braised beetroot with blackcurrant molasses and sunflower seed cream; and cider flambée mussels with caramelised cream, lemon verbena and bottarga toast.
A selection of sharing plates for large cuts of meat will also be available, such as slow-grilled stuffed duck.
The wine list, which focuses on natural wine from France and Europe, has been devised by Kowalski, while the cocktail list will feature Sesta’s home-made spirits, including blackberry liqueur.
