Former Northcote head chef Matthew Sherry has joined the Michelin-starred Number One restaurant at the Balmoral hotel in Edinburgh.
Sherry will showcase seasonal Scottish produce through his new three- and seven-course menus at Number One, which was first awarded a Michelin star in 2003, and is due to reopen on 4 June.
Sherry replaces Mark Donald who was appointed head chef at the Glenturret Lalique restaurant, due to open at the Glenturret distillery in Perthshire later this summer.
Before working at the Michelin-starred Northcote in Lancashire as head chef, Sherry worked under chef patron Dominic Jack at Castle Terrace in Edinburgh.
“Excellence is at the heart of everything we do at the Balmoral and Mathew brings this ethos in abundance,” said executive chef of the five-red-AA-starred, 187-bedroom Balmoral hotel, Gary Robinson.
“His flair and classical training, coupled with his passion for incredible Scottish produce, makes for an exciting chapter ahead for Number One.”
Sherry, who is looking to expand his kitchen team, added: “I am honoured to return to my home city to head up the kitchen at such an iconic restaurant and work with the many seasoned professionals already here at the Balmoral. The detail on each dish has been carefully designed, from sourcing seasonal ingredients to the way they are displayed and plated, everything has been thoughtfully considered.
“I am thoroughly enjoying working closely with restaurant manager, Emma Lonie and her established front of house team. We will ensure that we continue to deliver a truly special experience for every guest.”
