Mark Jordan to open Cow & Lobster in Jersey

Mark Jordan, former executive head chef of Jersey's Atlantic hotel, is to open a 140-seat restaurant focused on some of the island's key ingredients.

 

Located on the waterfront in the heart of the financial sector of Jersey's capital St Helier, Cow & Lobster by Mark Jordan will offer a limited menu featuring oysters for starters, followed by burgers, steaks and lobster dishes.

 

Jordan, who spent 13 years at the one-Michelin-star Atlantic hotel owned by Patrick and Treena Burke, is opening the restaurant in partnership with Jersey entrepreneur Jonathan Ruff, the owner of the island's Tamba theme park. He will continue to run the informal restaurant, Mark Jordan at the Beach, with the Burkes.

 

The oysters will be supplied by renowned Jersey oyster farmer Chris Le Masurier and will be served simply raw, poached, smoked or with some embellishment such as a cucumber beurre blanc.

 

Made using Jersey beef, the burgers will start at £18, rising to £40 for one topped with half a smoked lobster. A selection of steaks, including sirloin, rib eye and fillet will be char-grilled in the open kitchen.

 

Jordan described the interior as “vibrant and funky”, with pillar-box red seating, a reclaimed oak bar and granite-lined walls.

 

Cow & Lobster by Mark Jordan will open on 17 October.
