Mark Greenaway has said he is “super excited” to reveal plans to open a restaurant in the capital in 2021.
The chef, behind Grazing by Mark Greenaway at the Waldorf Astoria Edinburgh, is keeping quiet about the location and name of his new venture. But he said it would have 30 covers, offering an extremely seasonal, frequently changing menu with signature dishes, such as Greenaway’s crab cannelloni and those from his time on Great British Menu featuring.
As well as overseeing Grazing by Mark Greenaway, currently open from Fridays to Sundays, the chef has been running a pop-up with the Gentlemen Baristas in the former Wahlburgers site in Covent Garden.
He told The Caterer: “I’m super excited about the whole project and am able to use the time here to do development and training.
“The next six months I’m going to spend finding the best staff, the best suppliers and I’m in such a privileged position because everyone I’ve employed here [at the Covent Garden pop-up] the idea is we pick them up and move them to the new site.”
The chef had run Restaurant Mark Greenaway in Edinburgh until September 2018.
