Marc Hardiman appointed head chef of Galvin at Windows

Marc Hardiman has been appointed head chef of the Galvin at Windows restaurant on the 28th floor of the London Hilton Park Lane hotel ahead of its reopening on 1 August.

 

Hardiman joins the three-AA-rosette restaurant from the Ritz hotel, where he was senior sous chef, having previously worked as executive chef across Ian and Christa Taylor’s Kaleidoscope Collection, including No 15 Great Pulteney in Bath. He also held the same role at the four-red-AA-star, 43-bedroom Great Fosters hotel in Surrey 2014-18, during which team the restaurant gained a Michelin star, and at the five-red-AA-stared Bovey Castle in Dartmoor, Devon. He is understood to have replaced Joo Won at Galvin at Windows.

 

Chris Galvin, chef-patron at Galvin at Windows, said: “We are thrilled to have Marc on board with us, bringing his inspired ideas for new and exciting dishes to showcase to our customers as soon as we reopen our doors on 1 August.”

 

Hardiman said: “This is a really exciting move for me, joining Chris and his team at such a pivotal moment in our industry. I am all about championing quality sustainable seasonal produce. Our re-opening menu is inspired by the incredible ingredients found in the great British larder as well as my travels, designed to deliver maximum flavour and hopefully nothing but true satisfaction and happiness for customers.”

 

Dishes on the seasonally-inspired reopening menu will include Portland crab, heirloom tomatoes, fresh almonds; Anjou pigeon farci à gratin, celeriac, damson, black olive; and apple tarte tatin, Calvados served with Tahitian vanilla ice-cream.

 

Hardiman's appointment follows the announcement earlier this year that Peter Avis, winner of the 2014 Manager of the Year Catey, would be replacing long-serving general manager Fred Sirieix following Sirieix's departure.
