Luke Selby and Ruth Hansom among those to vie for Bocuse d'Or team UK selection

The international culinary competition sees the world's greatest talents compete to present plated and platter-based dishes for a judging panel made up of some of the most respected chefs on the planet.

 

The long road to Lyon, where the final of the competition established by Paul Bocuse in 1987 takes place, begins at the end of next month with the selection of the UK team's candidate - a role taken on last year by London's Restaurant Story head chef Tom Philips, who came 10th overall.

 

Luke Selby, who in April left his role as head chef at Ollie Dabbous' Hide Above in London's Mayfair, has put himself forward, having already won the Roux Scholarship in 2017, the National Chef of the Year competition in 2018 and BBC Two's Great British Menu in 2019.

 

Ruth Hansom, head chef at Pomona's in Notting Hill, brings her own impressive pedigree to the competition, having won the Young National Chef of the Year title in 2017 and been named the Royal Academy of Culinary Arts' Michael Bourdin Scholar in 2016.

 

Robert Sussex is the only foodservice chef to take part in the finals. The ISS employee was a semi-finalist at the National Chef of the Year competition in 2019.

 

Meanwhile, the Ritz London sous chef Ian Musgrave will represent the Great British culinary institution as a candidate in the heats, having won the British Culinary Federation Chef of the Year award in 2018.

 

All four will compete in the first round at the Restaurant Show in London on 30 September, where one will be chosen to represent the UK in the European heats in June 2020 before proceeding to the international competition in Lyon in 2021.
