Little Viet Kitchen’s Thuy Diem Pham named BaxterStorey chef partner

She joins the ranks of Kirk Haworth, Ruth Hansom and Adam Byatt, who are also chef partners at the contract caterer.

Chef and author Thuy Diem Pham has joined BaxterStorey as chef partner to broaden the contract caterer’s knowledge of Vietnamese cuisine. 

 

The former head chef and restaurateur of the Little Viet Kitchen in London’s Islington will offer Vietnamese cooking masterclasses for all BaxterStorey chefs across the UK.

 

She will deliver sessions on creating sauces, making summer rolls and identifying key ingredients and techniques in traditional Vietnamese food, in a nod to BaxterStorey’s broader ‘Nourish to Flourish’ movement, which aims to instil people- and planet-conscious dining.

 

Pham, who is also the author of The Little Viet Kitchen and Vietnamese Made Easy, said: “I aim to share Vietnamese cooking techniques that are not taught at culinary school, imparting tips and old-school tricks in the hope it will inspire chefs to step up their dishes, but most importantly give them the confidence to approach this cuisine without recipes or measuring tools so they can intuitively balance flavours. I hope to inspire chefs to explore fusion cuisine with integrity, leveraging their newfound skills.”
