Liam Fauchard-Newman has been appointed head chef at Holborn Dining Room, located in the Rosewood London hotel.
A 2019 National Chef of the Year finalist, Fauchard-Newman (pictured above right) previously worked as head chef at the Swan in West Malling, Kent; senior sous chef at Rhubarb’s Fenchurch restaurant in London; and chef de partie at the Ledbury in Notting Hill.
Simon Young (pictured above left), executive chef at the Rosewood London, wrote on Instagram: "Introducing Liam Fauchard - Newman our new head chef of Holborn dining room, very happy to have him as part of the team!"
His appointment follows the departure of former executive head chef Calum Franklin, who left the restaurant this summer to focus on new projects.
Franklin oversaw the restaurant for eight years and became known for his pie creations, inspired by a cache of antique pie moulds he discovered in a basement store. A dedicated pie room opened at the restaurant in 2017 and, under Franklin, the restaurant won Hotel Restaurant Team of the Year at the 2018 Hotel Cateys.
