Jason Atherton is to part ways with the Biltmore hotel in London's Mayfair, having opened the Betterment fine dining restaurant when the property was relaunched in 2019.
The Betterment , led by chef Paul Walsh, opened before the pandemic but was forced to close when the first lockdown was announced in March 2020.
Atherton and Walsh reopened the site in April 2021 with Café Biltmore, a more casual concept, and had been planning a return for the Betterment before agreeing to leave Hilton's luxury LXR Hotels and Resorts brand. Their last service will be 18 September.
Atherton told The Caterer: “We had been hoping to relaunch with a fine dining and a casual concept but the ownership were looking for a different direction so we mutually agreed to call it a day.
“We’ve very much enjoyed our return to Grosvenor Square and wish the hotel well.”
He added that there were more openings planned for later in the year with a London site secured for a new concept.
Atherton opened the Betterment at the Grosvenor Square hotel in 2019 as part of a £60m redevelopment of the property. The chef also oversaw the wider food and beverage offering at the site, including Café Biltmore and the Pine Bar and Tea Lounge.
