Tinned fish restaurant Saltie Girl among new additions to Michelin Guide

Ten new restaurants, including tinned fish specialist Saltie Girl in London and Furna in Brighton, have been added to the Michelin Guide Great Britain and Ireland’s selection this month.

 

The red book updates its recommendations monthly based on its inspector’s travels, with any additions highlighted by a ‘New’ symbol.

 

It will not be confirmed if the restaurants will receive a star, Bib Gourmand, or any other awards until the next formal Michelin Guide ceremony, which is likely to be early next year.

 

Michelin said Saltie Girl took advantage of the “new craze” for tinned fish, which it served with “great complementary accoutrements”.

 

Furna, which opened in Brighton in November 2022 and is the first solo restaurant for chef Dave Mothersill, was praised for its “precisely crafted dishes” focusing on British produce with Asian influences “and a creative edge”.

 

Other additions included Purnell’s Café and Bistro, which was opened by chef Glynn Purnell in a former 14th century monastery.

 

The guide also praised Hiraeth, an independent pub restaurant which opened eight months ago in the tiny Welsh village of Llysworney after chefs Lewis Dwyer and Andy Aston raised more than £30,000 in a crowdfunding campaign.

 

There was also recognition for hotel restaurants, including the Orangery at Rockliffe Hall in Hurworth-on-Tees, and the Montagu’s Mews restaurant at the Royal Crescent hotel in Bath, which opened in March.

 

Seasonal tasting menu experience Forge, which is located on the Middleton Lodge Estate in north Yorkshire, was praised for its use of local produce including honey and birch sap grown on the 200-acre estate.
