The Dorchester hotel on London’s Park Lane is to relaunch the Grill at the Dorchester as the Grill by Tom Booton later this month.
Booton, who is executive chef at the hotel restaurant, will be the first chef to have his name in the venue’s title in its 92-year history.
The 2019 Acorn Award winner was promoted to the role in February.
A new menu will launch on 18 May offering sharing plates created from British produce, which will be paired to Booton’s musical playlists.
Example dishes include a series of Chef’s Counter ‘snacks’ such as Welsh lamb belly; cuttlefish skewers; and white pudding on brioche.
Larger plates such as a reimagined take on ham, egg and chips and desserts such as baked apple tart with cider and Cornish Yarg will also be available.
As part of the rebrand, the restaurant has relaunched a daily breakfast service that will feature dishes including truffled egg and soldiers and the Arnold Bennett omelette.
Booton is supported by head chef Adam Nevin, general manager Mattia Marcelli and head sommelier Leonardo Barlondi.
