Galvin brothers to open restaurant at Kimpton Fitzroy London hotel

Chefs Chris and Jeff Galvin are to open a new restaurant at the Kimpton Fitzroy London hotel later this month.

 

The brothers are collaborating with Adam Gray, who maintained a Michelin star for nearly a decade while head chef at Gary Rhodes’ Rhodes 24 restaurant in the City of London, to launch Galvin Bar & Grill on 27 September.

 

It will open in the hotel’s grand dining room, which was designed by Charles Fitzroy Doll in 1898 and used as an inspiration for his dining room on the RMS Titanic. The site previously housed Neptune, the seafood restaurant launched by Brett Redman and Margaret Crow in 2018, which has since closed.

 

Galvin Bar & Grill will have its own entrance on Guilford Street and seat 100 covers.

 

A statement announcing the opening described the restaurant as a "modern-day approach to a British bar and grill" with a menu focused on ethically-sourced produce.

 

It said: “While rooted in British cooking, the menu will not be wedded to traditional dishes, instead, drawing on other cultures to reflect the diversity of modern Britain. The menu will embody how the Galvins would like to see Britain today: ethical, generous and open.”

 

Dishes will include beef short rib with salt-baked celeriac, bone marrow and ale-braised onions; turbot T-bone, aromatic fennel, potato terrine and a herb butter sauce; and plant-based dishes such as roasted pumpkin with Berkswell and sage.

 

Desserts will range from the Galvin’s apple tarte tatin with clotted ice cream to Gray’s take on British classics such as bread and butter pudding.

Chris said: “This opening is a very special one for us. Having worked in restaurants in a number of London’s best hotels, we have always enjoyed welcoming guests from far and wide and are looking forward to showing them the best of what modern British cuisine has to offer.

 

"Up to 50% of diners in our other Galvin restaurants choose a plant-based or vegetarian tasting menu, so we have enjoyed working with Adam to ensure this is reflected in the menu at Galvin Bar & Grill."

 

The brothers' hospitality group runs the Galvin Green Man gastropub in Chelmsford and London restaurants Galvin La Chapelle in the City, Galvin Bistro and Bar in Spitalfields and Galvin at Windows on the 28th floor of the London Hilton on Park Lane.

 

Chris and Jeff are also executive chefs at the Middle & Over Wallop fine dining restaurant at Glyndebourne, the opera house in Sussex, where they will hold tenancy until 2024.

 

The Kimpton Fitzroy was previously named the Principal London but rebranded after Starwood Capital Group sold the Principal hotel portfolio to French investor Covivio in 2018. It is managed by IHG Hotels & Resorts.
