Former Brindisa head chef to launch new venture

Ex-Brindisa head chef Nicolas Modad and street food stall founder Federico Fugazza are to launch their first venture together in Southwark.

 

Due to open on 29 January, Chimis will be a 44-cover Argentinean Parrila restaurant serving traditional dishes with a focus on charcoal grilled meat and fish.

 

Signature dishes will include Pulpo asado (grilled octopus with stuffed polenta, served with smoked paprika and salsa criolla), grilled lamb cutlets as well as Argentinean rib eye and sirloin steak alongside grilled vegetables and pasta made in house. To start, expect Mollejas (sweetbreads with chimi lemon sauce), Provoletas (grilled Provolone) and empanadas.

 

Modad and Fugazza met while working in Borough Market where Fugazza founded Argentinean street food stall Porteña.

 

Along with Mijal Lasus, also part of the opening team, the trio would frequent at Chilean restaurant El Vergel. When the owner retired, they decided to continue the tradition and took the site to open Chimis.
