Adam Smith to head up new restaurant at Coworth Park hotel

The Dorchester Collection’s Coworth Park country house hotel has announced that new restaurant Woven by Adam Smith will open on 8 September.

It will replace the hotel’s former flagship, Restaurant Coworth Park, which received a Michelin Star in 2018.

Adam Smith joined Coworth Park as executive chef in 2016. He previously worked at the Ritz in London (where he was named Roux Scholar in 2012) and the Devonshire Arms in Yorkshire.

He will offer a seasonal menu taking from both classic and contemporary styles of cookery, reflected in a drinks offering with a focus on English wines.

Smith said: “A memorable dining experience is created by so much more than the dishes that we eat. With Woven, we will be pushing the boundaries of creativity and excellence in food, but also in drinks, service and design to create a restaurant that delights both destination diners and hotel guests alike.

“Stories and knowledge from my entire career, alongside inspiration from the idyllic landscape, will be woven into the menus, and the dishes, whilst refined, will be presented in playful and contemporary ways. Woven has been many years in the making, and we cannot wait to welcome our first guests.”

Martin Hulbert, who led the 2010 refurbishment at Coworth Park, has returned to lead the interiors at Woven by Adam Smith.

Seating 44 guests and an additional 14 in the conservatory, the restaurant will feature fabrics, lighting and artworks inspired by the natural world.

Woven by Adam Smith is located among 240 acres of parkland in the Berkshire countryside. The set price menu is £80pp for lunch and £130pp for dinner.

The Dorchester Collection includes several international luxury hotel destinations, including the Dorchester, 45 Park Lane and Coworth Park.
