Daniel Clifford announces guest chef series at the Flitch of Bacon

Two-Michelin-starred chef Daniel Clifford of Midsummer House in Cambridge has unveiled a series of guest chef nights at his pub, the Flitch of Bacon in Little Dunmow, Essex.

 

The confirmed line-up includes Mark Abbott, head chef at Midsummer House; Tommy Banks, head chef of the Michelin-starred the Black Swan Oldstead, Yorkshire; Tom Kerridge, chef-patron of the Hand and Flowers in Marlow; and Tim Allen, executive chef at the Wild Rabbit in Kingham, Oxfordshire.

 

Abbott will be the first to take the reins on 25 January. After his recent success on BBC Two's Great British Menu

 

Banks, who made it to the banquet alongside Abbott in the last series of Great British Menu, will be taking up residency on 22 February. The chef runs the Black Swan at Oldstead with his parents, Tom and Anne, and his brother, James, who oversees the front of house. He is passionate about quality ingredients, foraging and growing produce himself.

 

Kerridge will enter the kitchen on 22 March. In 2012, Kerridge's the Hand and Flowers was the first pub in the UK to be awarded two Michelin stars. Clifford took to Twitter to express his excitement: “The @ChefTomKerridge guest night at the @flitchofbaconLD has sold out. In an hour. You legend Tom.”

 

Allen, who will be cooking on 26 April, was the last chef to be confirmed in the first phase of announcements last night. Allen, formerly chef at Launceston Place in Kensington, took on a new role at the Michelin-starred Wild Rabbit in August 2015.

 

Clifford has also said that dates are in the pipeline with Glynn Purnell, Michelin-starred chef of Purnell’s in Birmingham, Angela Hartnett, chef-patron of Michelin-starred Murano in London’s Mayfair, restaurateur Mark Sergeant of Rocksalt in Folkstone, Kent, and TV chef Gizzi Erskine.

 

Each evening will consist of a four-course menu, which are yet to be confirmed.
Tickets cost £70 each, which includes a glass of wine with each course.
