Christophe Bouchu to join restaurant as GM at new-look University Arms, Cambridge

Christophe Bouchu has been appointed general manager of the British focused restaurant within the new University Arms hotel in Cambridge, which is set to open next year following an £80m refurbishment.

He will head up the front of house team of Parker's Tavern, alongside head chef Tristan Welch whose appointment was announced earlier this year. The restaurant will operate as a standalone outlet with a strong focus on produce from East Anglia.

Bouchu will join the 110-cover restaurant and 61-seat bar from Estiatorio Milo in London, where he has spent the past three years as general manager. He previously worked at Colbert, the Corbin & King restaurant on Sloane Square, London.

Bouchu said: "I am delighted to be joining the Parker's Tavern team and am honored to be a part of the launch of this exciting new restaurant and bar."

The University Arms is owned by real estate investor Melford Capital, who bought the property from the De Vere Group in 2012. It was originally due to reopen this year following the extensive refurbishment, which is being overseen by interior designer Martin Brudnizki.
