The Colombian-born executive chef launched the wood-fired restaurant in January 2023
Miller Prada will be leaving his role as executive chef at the Michelin-starred Humo in London’s Mayfair at the end of this month.
Colombian-born Prada arrived in London in 2012 and worked at the likes of Pollen Street Social, the Ledbury, Endo at the Rotunda and Sumi before launching Humo in January 2023 with Creative Restaurant Group.
The group, which also operates the Michelin-starred Endo at the Rotunda, confirmed Prada’s departure in a statement from chairman Misha Zelman, founder of Burger & Lobster.
He said: “Opening Humo with Chef Miller was an extraordinary culinary journey where we challenged the boundaries of using charcoal, grills, and unique produce to create a culinary masterpiece. I extend my best wishes to Chef Miller as he embarks on his next culinary adventure.”
Humo, meaning smoke in Spanish, quickly gained a following for its wood-fired cuisine and in 2024, it received a Michelin star. All of its dishes are prepared on a four-metre-long robata grill – no gas or electric cooking is involved.
The restaurant is also home to Abajo, which opened last summer as a chef’s table concept inspired by Prada’s Colombian heritage.
Sous chef and Columbia native Moris Moreno, who previously worked at Leo restaurant in Bogotá and Central restaurant in Perú, will continue to oversee the 10-seat private dining room. Meanwhile, head chef Robbie Jameson will lead Humo.
