The chef director of Heritage in Slaugham confessed he is sad to say goodbye to the restaurant, which opened after a successful crowdfund in 2019.
Chef Matt Gillan has revealed there has been an “unexpectedly monumental amount of sadness” involved in transforming his restaurant Heritage in Slaugham into an events-led venue.
The Great British Menu chef, who was formerly head chef at the Pass in South Lodge, Surrey, opened Heritage in 2019 following a successful crowdfunding campaign that raised almost £90,000.
The restaurant offered à la carte dishes alongside a four- to six-course tasting menu, with a focus on fine dining.
Heritage also has five boutique bedrooms, with room rates starting from £300.
However, last month, the chef announced the Sussex restaurant will focus on “one-off dining journeys”, offering guests experiences such as high-end garden dining, a weekend retreat, or a silent disco with snacks.
In a video message on Instagram that marked his final restaurant service, Gillan said: “I’m just taking a moment to look at everything we achieved and set out to achieve with Heritage from the start.
"As much as I am very excited, there is unexpectedly a monumental amount of sadness to say goodbye to the first incarnation of Heritage.
“I’m proud of all the team. It’s been an absolute pleasure to work with you and speak to as many guests as I have over the last five years, and I just wanted to take a moment to acknowledge that. I’m a little bit emotional about it at the moment.
"Thank you to everyone who has been supportive at any point that you have touched Heritage.”
