Brian Hughson has been appointed head chef of D&D London's 20 Stories in Manchester, following the departure of Aiden Byrne last year.
Hughson has previously held positions including executive chef of Coworth Park hotel, Ascot, and head chef of the Grill at the Dorchester, London, after which he worked in Dubai.
He said: "20 Stories is an iconic restaurant at the heart of a city where the food scene has blossomed over the last few years. Manchester has become a destination for diners with high standards and the city has responded with a number of fantastic restaurants."
Hughson said he would be serving "good honest food", while introducing changes designed to keep Manchester's tallest restaurant at the top of its game.
The restaurant comprises a 104-cover fine-dining restaurant and 80-cover grill.
Byrne stepped down from the role in November, eight months after the restaurant's launch, and went on to relaunch Manchester House.
