Could you represent the UK at the next Bocuse d’Or competition?

The Bocuse d’Or UK Academy has opened submissions for chefs looking to represent the UK in the prestigious international cooking competition, with entries set to close on 14 June.

 

To be eligible to apply, chefs must hold a British passport and provide a CV and cover letter to Michelle at koyahpr@icloud.com.

 

Entrants should explain their reasons for wanting to represent the UK in the 24-country-strong competition, as well as outlining their culinary experience and attitude.

 

Shortlisted chefs will be invited to interview with Bocuse d’Or UK president Clare Smyth, chair Andreas Antona and UK performance coach Mike Duckett.

 

The Bocuse d’Or UK Selection cook-off will take place on 10 July at the Gordon Ramsay Academy in Woking, Surrey under the theme of ‘Feed the Kids’.

 

Finalists will be asked to cook six plates in five hours 30 minutes. Requirements include using Scottish salmon with a sauce and three garnishes that feature ingredients known to support cancer recovery, such as artichoke, beetroot, and walnuts.

 

Chefs will also be tasked with preparing a platter with a saddle of South West UK lamb and lamb sweetbreads from Aubrey Allen, which will be served with two seasonal garnishes and a sauce.

 

The winner of the UK selection will participate in the Bocuse d’Or European heats in Trondheim, Norway, from 19-20 March 2024.

 

The Bocuse d’Or was founded in 1987 by Paul Bocuse and seeks to reward culinary excellence, dedication, artistry and achievement.

 

Last year, the UK was represented by Ian Musgrave, senior sous chef at the Ritz, and Adam Beaumont, a demi-chef de partie at the Ritz. The pair came seventh out of 23 teams in at the world final in Lyon, France.

 

The UK has competed in all but one world final, and previous chef candidates have included Tom Phillips, Adam Bennett, Simon Hulstone, John Williams, Antony Worral Thompson and André Garrett.

 

Smyth took over the role of president from Simon Rogan this year and has spoken of her determination to boost Team UK's changes of winning the contest.
