Bjoern Wassmuth has been appointed executive chef of Aster in London and relaunched the Nordic-influenced restaurant as a European grand café.
Wassmuth has replaced Helena Puolakka, who opened the D&D London restaurant in Victoria's Nova complex in 2017.
Last year Puolakka's role was expanded to include the executive chef position at Skylon, which placed her at the helm of two D&D London restaurants. D&D confirmed she will continue to work with D&D alongside her new role at Savoy Helsinki, where she is now based, however it is unclear whether she will continue in her role as executive chef of Skylon.
Wassmuth will also retain his position as executive chef of D&D's German Gymnasium in King's Cross, which he has overseen since 2015.
The newly-focused Aster, which launched on 20 May, features a menu offering oysters; burrata and smoked semi-dried heritage tomatoes with basil pesto, lemon olive oil and balsamic; Spanish seabass with sauté radish, new potato, samphire and watercress velouté and chicken schnitzel with rocket, beans, sundried tomato, sweet potato fries and a red wine jus.
Some plates will remain on the menu such as cured salmon with cucumber and crispy potato and meatballs with mashed potato and lingonberry jam.
