Bill's to trial new ‘local' menus at three sites

Bill's Restaurants is test driving new menus "adapted to local customers" in three sites in and around London.

The British casual dining brand has refurbished its sites in St Martin's Courtyard in London's Covent Garden, the Westfield shopping centre in London's White City, and St Albans. Format changes include the introduction of small plates at St Martin's Courtyard and Westfield suited to after work drinks, and sharing dinner options in St Albans aimed at family dining.

St Albans will be the first site to re-open on 29 January, followed by St Martins Courtyard and Westfield in early February.

All three restaurants will feature seated bar areas with seperate menus offering dips and nibbles alongside Bill's existing house cocktails and drinks.

Mark Fox, chief executive of Bill's Restaurants, said: "We have sought to build on the solid foundation of our existing estate by adding more wow factors across a range of guest touchpoints from crockery to menu options and uniform to furniture.

"By taking what people love most about Bill's and enhancing and adapting it to grow our appeal and further differentiate us in a changing marketplace we believe that we can reach new audiences and truly impress our many existing loyalists."

Bill's was founded as a fresh produce store and café in Lewes, East Sussex by greengrocer Bill Collison in 2000; there are now more than 80 restaurants across the UK.
