Alyn Williams has been appointed executive chef at the Magistracy Dining Room in Hong Kong.
The restaurant occupies one of the city’s oldest surviving 19th century law courts, which was relaunched by hospitality group Black Sheep Restaurants in 2022.
Williams is heading up the main dining room with a menu highlighting British produce.
His dishes include dressed Dungeness crab; ‘Arnold Bennett’ souffle; slow-steamed Atlantic cod; and salted caramel tart.
Williams won National Chef of the Year in 2012 and ran the Michelin-starred Alyn Williams at the Westbury restaurant from 2011-2019.
In 2021, he won £57,000 in damages for unfair dismissal from his role at the hotel restaurant.
The chef joined DC Comics-themed restaurant Park Row in London as executive chef in 2022, though the restaurant has now closed with plans to relocate.
