Hansom and Josephine among June Michelin Guide additions

Michelin provides monthly updates on its selections based on its inspectors’ travels around the country.

Eight new restaurants, including Ruth Hansom’s Hansom in Bedale and Claude Bosi’s Josephine in London, have been added to the Michelin Guide Great Britain and Ireland’s selection this month.  

 

The red book updates its recommendations monthly based on its inspectors’ travels, with any additions highlighted by a ‘New’ symbol.

 

It will not be confirmed if the restaurants will receive a star, Bib Gourmand, or any other awards until the next formal Michelin Guide ceremony.

 

The former Young National Chef of the Year opened her eponymous restaurant with her husband Mark Hansom-Rigby, who is also the general manager, in February this year.

 

Michelin praised her “clear reverence for Yorkshire produce” and her “rather handsome (pun intended)” overall offering at the Grade II-listed, 16th-century building.

 

Her 12-month residency at Samuel’s restaurant on the nearby Swinton estate was also listed in the Michelin Guide.

 

Other new additions included the Shed in Swansea from chef-owner and St John alumnus Jonathan Woolway, which showcases “proudly Welsh” cuisine, and the Mediterranean-inspired Morchella in London’s Exmouth Market from the team behind Perilla in Newington Green.

 

Meanwhile, Claude Bosi’s Lyonnais restaurant Josephine in London’s Chelsea also made the list, less than four months after its launch.

 

Bosi told The Caterer ahead of Josephine’s opening: “Josephine has been a project in my mind for a long time. It’s something that I was planning when I was at Hibiscus. I wanted to do a bouchon like my parents used to have, a neighbourhood site where you can come and have a glass of wine and a sandwich, a three-course meal or a plat du jour. Something very casual and low-priced.”
