What was your best subject at school?
I think I have to say physics since I went on to do it at university. I loved art as well
What was your first job in catering?
A café called Mimi's Bakehouse in Leith. I worked there on weekends as well as doing my day job when I was first getting serious about cooking for a living
What do you do to relax?
Eat somewhere nice, drink something nice, walk the dog, spend time with my wife and daughter
Which is your favourite restaurant?
The Moorcock Inn, Norland
What's your favourite hotel?
Coombeshead Farm in Cornwall. Last time I went there, in 2017, I wanted to stay forever
What is your favourite drink?
Big Foam lager by Donzoko
Which ingredient do you hate the most?
Microherbs have had their day
What flavour combinations do you detest?
Getting something sweet too early in a meal bothers me
What is your favourite food?
I could eat spaghetti every day and not be bored
Which person in catering have you most admired?
I always look up to people who have better skills, focus, and more experience than me
Which person gave you the greatest inspiration?
I started cooking because of Fergus Henderson
If not yourself, who would you rather have been?
I'm happy being myself but I will still say David Bowie

What irritates you most about the industry?
No shows, obviously
Who would play "you" in a film about your life?
Tom Hardy/Michael Fassbender/young Marlon Brando would all be acceptable

At the moment, Walden by Henry David Thoreau
What is your favourite prepared product?
Smoked eel
If you had more time, what would you do?
Read, sleep in late and then build a cabin
