What was your best subject at school?

I only ever wanted to be a chef so school never interested me

What was your first job?

Brown's Hotel Restaurant 1837, as an unpaid apprentice

What do you normally have for breakfast?

A bacon and egg roll is always a winner

What's your favourite restaurant?

Eleven Madison Park in New York

What's your favourite hotel?

The Langham hotel

What's your favourite drink?

A whiskey sour

Which ingredient do you hate the most?

Smoked cod's roe

What flavour combinations do you detest?

It's a strange one, but chocolate and orange is not my favourite combination

Which person in catering have you most admired?

Andrew Turner

Do you have a favourite food?

Mac ‘n' cheese and fried chicken

If you had not gone into catering, where do you think you would be now?

When and where was your last holiday?

New York in March for a week

I had an amazing hamburger the other day at the Hour Glass!
