Young pastry chef finalists announced in new Coup de Pates competition
Five young pastry chefs have been chosen to compete to develop a new bakery product for Coup de Pates.
The five finalists were chosen for submitting innovative canapé ideas to the first Chefs at Play competition organised by the ingredients and bakery product supplier using one of its semi-prepared products as a base.
The chefs will now create their canapés for a judging panel including TV chef James Tanner and pastry chef Thomas Leatherbarrow. The winner of a development day alongside the chef judges in Paris will be announced in January 2016.
The final five and their creations are:
- Shaun Longmire
- Eleny Islay Minto, part-time pastry chef, University College Birmingham - salted cashew butter and Greek yoghurt tartelette, infused with lime
- Alice Prothero, apprentice chef, Houndgate Townhouse, Darlington - Waldorf salad macaroon
- Jack Ellingham, chef, Climpson's Arch, Hackney - apple terrine, arlette pastry and brown butter ice-cream, sour caramel
- Emily Moorhouse, commis chef, Shrewsbury College - profiteroles with clementine crème patisserie, gingerbread foam, pumpkin shards, liquorice crumb
Mariam French, head of marketing and product development for Coup de Pates, said: "The UK is a hotbed of young pastry talent. In the end, their recipes, the rationale and the focus on bringing something new to the plate shone the brightest in the first stage."
