The growing popularity of classic childhood foods has prompted Macphie to launch a Viennese Mix to help the out-of-home sector tap into the burgeoning sales of Viennese biscuits (up 9.3% in 2009 to £18m) with a freshly-baked offering.

The nostalgic mix, sold in 12.5kg bags with an average ingredient cost of 6p per 40g, is added to softened butter to produce a pipeable paste to make traditional Viennese-style biscuits, fingers, whirls and shells - even lattice toppings on fruit pies - with a light, crumbly, melt-in-the-mouth texture. The mix can be dusted with Macphie's granular-textured Sweet Snow or filled with buttercream made from its 5th Avenue White Icing.
