While most smoked pancettas are supplied presliced, chefs have told Udale Speciality Foods that they would prefer a solid lump so they can slice, cube and sliver it according to their needs.
As a result, Udale has launched a 500g block of smoked pancetta under the Slack's of Cumbria brand, that has been produced to the same standards as the rest of the Slack's bacon range.
The Cumbrian-bred meat is cured and then air-dried before it is slowly smoked over oak and beechwood chips in the group's own smoke house. The intense flavour makes the bacon suitable for a variety of dishes including pastas, casseroles and soups.
Once opened, the block has a 10-day shelf life in the fridge.
