Thermal circulators and water baths from CTC
Cooking Technology and Concepts (CTC), the new innovation division at Magrini, has launched a range of thermal circulators and water baths to assist chefs in sous-vide cooking.
The line-up, from PolyScience of the USA and Roner of Spain, will circulate water and heat it to a preset temperature that will not fluctuate by more than half a degree.
The entry-level PolyScience 7306 is a portable circulator for use with any stockpot, roaster or bratt pan up to 28 litres in capacity. It offers high and low circulation speeds and three preset buttons for frequently used cooking or thawing temperatures.
The digital PolyScience 7312 stores as many as 10 chef-defined cooking programmes and offers continuously adjustable liquid circulation speeds. An adjustable bridge allows it to span chef's own vessels from 15in to 25in wide.
The top-of-the-range digital thermostat model from Roner adds microprocessor control and an LCD screen and will fit on to existing pans with a maximum capacity of 20 litres.
For chefs who prefer a purpose-built water bath, CTC supplies the 400mm-wide Roner Compact, a 20-litre stainless-steel bath with a built-in thermal circulator, countdown timer and closed water circulation system to guarantee stable temperatures.
