The combined blast chiller/freezer line from Valera will cool foods from 90°C to 3°C in 90 minutes, according to HACCP guidelines, or freeze the same amount from 90°C to -18°C in 240 minutes.

The blast-chill system will preserve the taste, colour and nutritional value of cooked or fresh foods and offers several benefits over freezing foods slowly in normal freezers.

Slow-freezing adversely affects the quality of existing stored foods and causes the growth of large ice crystals which break the intercellular membranes of the foods and lead to the leakage of liquids and vitamins.

For smaller kitchens, the counter-top Chilly blast freezer offers 3 x 2/3 gastronorm shelves and can chill up to 8kg of food per 90-minute cycle or freeze up to 5kg in 240 minutes.

The stainless-steel freestanding models have a chilling capacity that ranges from 18kg to 46kg, or 12kg to 36kg for freezing. They accept 1/1 gastronorm shelves or pans and feature removeable shelf supports for easy cleaning.

All Valera blast chillers automatically switch to storage stage at the end of a chilling or freezing cycle, and all but the Chilly counter-top model come with a core probe as standard.
