The Speciality Chocolate Fair, part of the Speciality & Fine Food Fair, has announced that the final line-up for the show will include Paul A Young.

Young is one of the UK's most well-respected chocolatiers and he is known for his ingenious flavour combinations.

On Sunday 7 September, the chef and owner of his eponymous patisserie, Paul A Young Fine Chocolates, will be demonstrating how to make his award-winning passion fruit-filled chocolate and demonstrate tempering and filling.

Young will also share his tips for the hot ingredients for 2015, and said: "I think the trend for Persian food will spill over into chocolate. We're already working on truffles with those influences for Christmas."

"Fresh ingredients may become even more important next year. Consumers are becoming more and more interested in what is in their food. If a truffle is raspberry flavoured, it should have actual raspberries in it. For us, we cannot tolerate flavourings or shortcuts."

The Speciality Chocolate Fair (from the 7-9 September at Olympia Grand, London) is set to inspire, with many top pastry chefs and chocolatiers demonstrating skills and flavour combinations including Marc Demarquette and Sara Jayne Stanes OBE from the Academy of Chocolate, as well as a wide variety of specialist exhibitors with an array of new products.
