Oriental opus from Amoy

Consumers are twice as likely to choose an outlet that offers their favourite world cuisine, but a Quickbite survey has found that the 186m market for ethnic cuisine is still under-represented on caterers' menus.

Chinese food is the leading ethnic choice in the UK. It is regularly eaten by 49% of people and is the third most popular evening meal served in pubs, according to the research.
