Fischer's reveals new Athanor solution from Grande Cuisine
Viennese-themed Fischer's Restaurant in London has unveiled its brand new Athanor solution from cooking appliance supplier Grande Cuisine.
The project was put out to tender by Corbin & King's foodservice consultants, and secured by Grande Cuisine based on their proposed design solution.
Commissioning chef, Lee Ward was presented with a tailored solution for the London café and konditorei which took into account several challenges including power restrictions, space and access difficulties. The final commissioned suite consisted of 70% gas components and elements, and was manufactured in six sections to be reassembled within the kitchen.
The suite is capable of operating from 8.00am to 11:00pm, every day of the week, and includes two 12kW gas solid tops, two 4.5kW gas simmer tops, two 10kW gas ovens, a gas salamander grill, a double plaque electric Athanor plancha and an Athanor multi-cooker/water bath.
The finished design implemented a layout to optimise workflow and durability during the busiest times of the day and service.
