The green revolution continues apace at M&A Environmental, which has devised way for caterers to dispose of their used fat and grease that will not gunge up the country's drains and may also benefit wildlife.

Chefs simply pour their unwanted oils and fats straight from the pan into 500ml Fat Trap tubs, leave them to cool, and then empty the congealed grease blocks into a bin or hang it outside for bird feed.

The plastic tubs - which are sold in packs of five costing £7.04 - can be reused and recycled at the end of their lives.

M&A is working on a larger five-litre size for high-volume kitchens.
