Ice-makers are getting bigger, but this creates a space problem for many caterers. The new IM240 from Hoshizaki addresses the issue by producing 240kg of ice a day in a footprint below 1sq m, so it will fit into most back-bar areas.

The cubes, which are dense and solid, are made at -25ºC and are robust enough to last for an evening. This makes them suitable for cooling bottled drinks, which is becoming popular for its visual appeal, rapid cooling and cost-effectiveness.

The ice-makers, which can store 110kg of cubes internally, feature fully automatic rinsing and flushing after each cycle, removable air filters, high-density foam-insulated bins to reduce melting, high-density foam-injected stainless-steel doors with tight-fitting gaskets to prevent air nourishing bacteria in the bins, bespoke water filters, and a closed cell jet system reduces humidity and prevents the build-up of old water.
