Details This latest addition to the Chef Les Fond Premium range of concentrated cooking juices has a 25% lobster content that combines the delicate flavour of the meat with the savour of the shell to create a refined and powerful fumet. It is free from preservatives, added colours and hydrogenated vegetable oils.
Use To poach fish and shellfish or to create rich risottos and bisques or flavoursome espumas, foams and butters.
