The new food service division established by Milk Link last September has launched a new low-fat cheese that has won the endorsement of the Craft Guild of Chefs and is ideal for primary schools, where 80% of meals use cheese.

The group worked closely with food service chefs to create Bladen Lighter, a cheese with 30% less fat than standard Cheddars but with no loss of flavour.

According to Craig Dillon, Milk Link's head of food service, the caterers had been unable to differentiate between its full-fat and low-fat Cheddars in blind taste tests.

A panel of Craft Guild of Chefs from the education, pub and fine-dining sectors awarded Bladen Lighter a B grade, despite preconceptions it would be tasteless, rubbery and lacking depth of flavour, after trialling the cheese in raw, oven-cooked, grilled and quick-browned tests.

Bladen Lighter is available in Mild and Mature 5kg blocks and as Grated and Grated Mozzarella Mix 1kg packs.
