Artisan smokehouse calls on London top chef for Coronation festival
Bates will create three dishes to serve up to the public when they attend the event in the gardens of Buckingham Palace; a gourmet smoked salmon bagel, a smoked salmon salad served in a bamboo cone and a selection of smoked salmon *canapés*.
Ross and Bates will also provide salmon carving master classes and demonstrate how smoked salmon can be used in a variety of dishes.
Bates explained: "This is a tour-de-force for producers within the UK who are currently at the top of their game and it has been an honour to be tasked with creating three standout dishes for the celebration.
"John Ross Jr has consistently produced a first-class smoked salmon using traditional brick kilns and they deserve to be recognised on this global stage. We're delighted to be a part of the Coronation Festival and thrilled to be able to help showcase everything that's good about the UK right now."
The limited edition Original Classic Smoked Salmon created for the celebration will be available to the foodservice industry from mid-June to mid-August.
