The Caterer is hosting a virtual summit in January explore the latest plant-based trends and how operators can manipulate their products and menus to appeal to all customers.

"Plant-based is something to be embraced rather than shy away from," said Chantelle Nicholson, chef owner of Apricity, who is speaking at the event. "A menu rich in plant-forward dishes is a must for me, and we have a lot of wonderful fruit and veg in the UK to bring to the forefront."

Joining Nicholson will be Kirk Haworth of Plates, David Moore of Pied à Terre, and plant-based consultant Valentina Fois, who will be opening the event with a look at the latest vegan trends to impact hospitality. Panels will discuss how to market a plant-based product and how to make vegan dishes stand out on restaurant menus.
