Video: Interview with Leon's Henry Dimbleby and John Vincent

Fast food chain Leon has opened its 11th restaurant in Old Compton Street in London.

The restaurant will be the company's largest yet and will feature a cookbook library, filled with favourite cookbooks of renowned like Jason Atherton and Bruno Loubet, along with their signed pictures decorated on the walls.

Leon customers will have their chance to add their own recommendations to the Leon library and have their photos placed on the wall next to famous chefs.

To mark the opening of Leon's newest and biggest store, caterersearch.com has produced an interview with Leon founders Henry Dimbleby and John Vincent, in which they talk about the story behind the business, and their philosophy on running a fast food chain:

The rise of the healthy fast-casual chains >>

Demand for healthy on-the-go snack options soaring >>
