Sommelier Sunaina Sethi to run Reebok Club's Pearson Room restaurant
The Reebok Club in London's Canary Wharf is launching a new restaurant next month, headed up by award-winning sommelier Sunaina Sethi.
The sports club on Canada Square will open the Pearson Room on 24 April as part of a major overhaul of its facilities. The restaurant will comprise a 70-seat bar and 120-seat dining room offering a menu of sharing plates and signature charcoal-grilled dishes.
The head chef will be Vagner Matos and the general manager will be Johnny Gonzalez. Both formerly worked at the Swan, Shoreditch House and Cecconi's.
Typical dishes will include fish tacos, pico de gallo, chipotle aïoli, pickled jalapeños, coriander (£7.50), queenies, nduja, gremolata (£8) and buttermilk fried chicken burger, avocado tomatillo salsa, black pepper mayo (£10), as well as guinea fowl crown, smoked chilli sauce (£22.50). Desserts will include Kirsch cherry sundae (£6) and strawberry jam & custard doughnuts (£6).
Sethi, sommelier at the Michelin-starred Trishna, has put together a diverse wine list from all over the world. She will also be taking on a front-of-house management role.
Created by B3 Designers, the Pearson Room's interior will feature dark timber flooring, steel, leather furniture and exposed industrial light fittings. The pewter bar is surrounded by 18 high stools, with further seating for 70. Situated on the second floor, it will have floor-to-ceiling glass walls overlooking Canada Square.
The cocktail and drinks menu will be led by Victor Matos, formerly of the Soho House Group, in collaboration with the team behind Purl and Worship Street Whistling Shop.
