The new venue, to be named Bar Battu, will be at 48 Gresham Street, close to St Paul's and is due to open in October 2010.

The site, which used to be occupied by restaurant Molloys, is being transformed into a two-storey, 120-seat venue with capacity for 80 downstairs and 40 upstairs.

The head chef will be Sydney Aldridge, who has worked at Galvin Bistrot de Luxe, the Hoxton hotel and Terminus in the former Great Eastern hotel.

Typical dishes on the wine-friendly menu will include a large selection of charcuterie, cheese, snail and ox cheek ragout, red mullet escabeche, bavette with shallots and bone marrow.

Amanda Mullard will be the general manager.
