Sawyer to run Rules kitchen

Dick Sawyer (below) is the new head chef at London's Rules restaurant.

He replaces chef-director David Chambers, who announced he would be leaving the Covent Garden restaurant last month after seven years in the job (Caterer, 10 June, page 10). Sawyer trained under Michel Bourdin at the Connaught hotel, was head chef at Oliver Peyton's Atlantic Bar & Grill and Brasserie St Quentin. He was also executive chef at the Oxo Tower's River Walk Caf‚. Rules director Julian Payne said Sawyer would continue the long tradition of serving quality food focused on British specialties. Chambers is now executive chef of the Mount Wolseley Country Resort near Dublin, opening in August.
