Paleo restaurant opens in London

A restaurant featuring dishes from the Paleo diet has opened in London's Westbourne Grove following a successful crowdfunding campaign.

Pure Taste is a venture from nutritional therapist and head chef Holly Redman and started as a monthly pop-up in Sussex before setting up in this permanent, 90-cover site. It officially opened yesterday (3 December) after a two-week soft launch.

Based on the Paleo or Paleolithic diet (also known as the caveman diet), its dishes will focus on protein-rich, high-fibre options and generally exclude dairy products, grains (such as those with gluten), legumes, processed oils and refined sugars.

Typical dishes will include gluten-free bread, charcuterie platters, chicken liver and bacon with plantain crackers, steak with sweet potato wedges, chestnut roast with orange and coriander cauliflower pilaf, mussels in Thai coconut broth and fresh fish such as salmon with pomegranate.

Desserts include gluten-free sticky toffee pudding with toffee sauce and salted caramel ice-cream, chocolate tart with cacao nibs, plus nut cheeses with apple and ginger chutney. There will also be a selection of biodynamic wines, gluten-free beers and Kombucha tea fruit juices (Kombucha is a fermented tea, originally said to be from China, and is often hailed as a healthy diet drink).

The restaurant shows artwork from Chilean-born artist Otto Schade and aims to provide an elegant, welcoming and fashionable atmosphere.

The opening has been funded via Kickstarter, which raised over £32,000 from an initial aim of £30,000. The campaign closed in December last year after 383 backers became involved.

Kickstarter is a website on which any member of the public can donate a chosen amount, usually from about £5-£10 upwards. Anyone pledging money is then promised a reward, depending on the venture. Campaigns only receive the money if they reach their total target in the allotted time.

Depending on the amount pledged, the Pure Taste rewards included a free starter and dessert; a cake made to your bespoke diet requirements; a free three-course meal; a one-to-one cookery lesson; a personalised supper club for 12 including mocktails; and even exclusive use of the restaurant for up to 50 people with a six-course menu for one backer of £5,000.

Commenting on the opening, founder and chef Redman said: "The premise of Pure Taste is one that combines a passion for healthy living with high-quality dining. Our extensive menus are a testament of our commitment to providing exceptional food and exhibiting the benefits of Paleo cooking."

The Paleo diet is popular worldwide. It is often associated with the phrase "eating clean" (eating as few refined and processed foods as possible) and often followed by people with food intolerances and other similar complaints.
