New man in Cru kitchen

London restaurant Cru has a new head chef, American Matthew Boudreau, who started at the Hoxton venue on Monday (15 November). Boudreau last headed up the kitchen at New York restaurant Vine Street in Shelter Island.

Outgoing chef Ian Thomason, formerly at the Savoy, is looking at opportunities outside London. Owner Brendan Murdoch said he expected Boudreau to up the quality of the food with an increased emphasis on seasonality.
